Black rice or emperor rice


Chinese black rice does not contain cuttlefish or squid ink, but rather owes its color to its high level of anthocyanins (a pigment from food or plants that gives them a reddish hue), which gives it a dark purple hue.

In ancient China, its consumption was reserved for the emperor, which is why it also receives this name or that of forbidden rice. Today, due to its nutritional properties, it is widely consumed by children, the elderly, and pregnant women.

Black rice is high in fiber, sodium, potassium, magnesium, among others, which makes it very healthy. It is also very aromatic, so it does not need many supplements.
